docs: Update for deprecated $parserMemc

Remove mention of this deprecated global in favour of documenting
the backend configuration instead.

Also update the outdated docs for where the sidebar is cached,
which was changed a while ago to use WANObjectCache instead.
See Skin::buildSidebar().
